Coconut Flour Waffles

One of my favorite grain-free breakfast items I make is coconut flour waffles. They are a good source of protein and fiber and can be kept in the freezer for several weeks to use as needed. I've used a recipe like the ones listed at the end of the post for a while. While the waffles are good, they do tend to be pretty dry because of the coconut flour, and the flavor of them doesn't really match the flavor of waffles made from wheat flour. So I've modified this recipe several times to try to change this, and have found a recipe that works well.

8 eggs
4 tsp. melted coconut oil (or other vegetable oil)
1/2 cup plain yogurt
2 tbsp. milk
2 tsp. honey
1 tsp. vanilla
4 tbsp. coconut flour
4 tbsp. potato starch
1/4 tsp. salt
1 tsp. baking soda
1/4 tsp. xanthan gum

Mix together eggs, oil, milk, yogurt, and honey in a bowl. Sift all dry ingredients and whisk into egg mixture until blended (it will take a while but the batter will eventually come together). Cook in waffle iron and serve with fruit, honey, or yogurt. :) Makes around 18 small waffles.
